I had a look at these links but couldn't find anything to solve the issue.
I had a bit of a further think... usually the simplest solution is the one to try first...
As Task Manager and Microsoft Office apps open in the Win10 VM without flickering, this suggested to me that the flicker may be due to a display driver and not an application.
So, bearing this in mind, I went & opened up Oracle VM VirtualBox Manager, clicked on the Display icon on the left hand side, and unticked the box for Enable 3D Acceleration (I recalled that this feature was highlighted as experimental during the earlier Win7 & 8.1 VM installs that I'd done - so it might be the culprit). I left the 2D Video Acceleration as it was, already enabled.
The Win10 VM now works full-screen without any flicker
