From the little I've seen there seems to be some uncertainty over on going development. For example, the vollstreckernet website says 'a new website coming soon' which could mean anything.
If you need and trust unsupported applications and accept the risk of them being unsupported you can have them on your system, but exclude them from the update process so they are 'frozen'.
Regarding qbittorrent, depending on your software source list it is possible your system is checking the standard repository and finding the version held there. The version held on the standard repository is unlikely to be the very latest release available direct from the developers. If you want the very latest version you need to check the developer instructions. This would likely involve adding new sources to the list.
